The Middle East was Grand Central Station on the ancient spice roads. Exotics and aromatics came from Africa and the Orient, to the elite and fortunate of Eurasia. This blend is complex and earthy. Some heat leaves a ‘tingle’ for just a little longer. Typically, red and white meats are marinated in these mixtures, then charred or roasted. Usually shaved and served directly on indigenous bread. (Can you say Gyro? Shawarma?) The flavors just keep coming and coming. Coriander, cumin, turmeric, chili, smoked paprika, garlic, and a couple of our own additions. Classic and creative.
