Dark, rich, sweet, spicy, sorta hot . . . and the smoke is included. Great as a rub before grilling. But use it in the oven or the stovetop, the rich smoke flavor you expect still shines through. Mix into ketchup for a Kansas City-style sauce, (and try mixing that 1:1 with mayonnaise to get 'Campfire Fry Sauce). Mix with vinegar or beer for a mop sauce at the grill. Even mix with a little soy sauce or sake' and get 'Texas Teriyaki'. The standard #5 has some heat. . . not to be ignored. However, there is Version #2.5 if you want to take it slow . . . or #7.5 for you 'Red Heads.'
SUGGESTIONS FOR USE
Brown sugar, a few choice spices, red pepper, and SMOKE. Comes as a dry mix that can be used as a rub, sprinkled on meat in a bag overnight to 'self-marinate', or mixed with a little flour for a dredge to make crusted dishes in the skillet or oven. Mix into other liquids like ketchup, beer, vinegar, soy sauce, or even coconut milk, and change its character for so many international personalities. Make it thick for the last 10 minutes on the grill, or mix it thin to mop on throughout the preparation time to keep the meat flavorful and moist. Thousands of gallons have been made Kansas City-style, and a lot of that has been turned into an incredible fry sauce by mixing half & half with mayonnaise. Pack it dry onto poultry for roasting in the oven. Brown with pork or beef cubes for a few minutes, then braise with liquid till tender. Mix into pulled pork or chicken.
